"More.... Lada?"This little man couldn't get enough of the spicy enchiladas I made for dinner tonight. Kamryn won't eat them, something about them being too spicy.

I'd give him some on the fork, he blew it a few times to cool it off, and then he swallowed it whole.

If you have a little one that won't eat... perhaps try something with a little kick in it!!
Enchiladas
(This is Aunite Panfi's recipe, altered, because I don't follow recipes well)
Start by boiling a few chicken breasts until cooked.Remove the chicken from the pot and let cool at room temp.
Meanwhile...Boil in about 3 cups of water..1 yellow onion, cut into chunks4 garlic cloves2 jalepeno peppers, sliced in half (deseed if you don't want to burn your tongue off)
Then...Get out your blender..Dump in one large can of cream of chicken (or mushroom) soup1 bunch of cilantro
Add to the blender...the boiled onionsgarlic cloves jalepenos (one at a time until you get the desired HEAT)1/2 cup of the water you used to boil the onion/garlic and jalepeno
BLEND IT UP!Now you have your Enchilada Sauce.
Back to the chicken...Shred it. Set it aside in a bowl.
Shred some cheese or open a pre-shredded bag
Open a pakage of corn tortillas.
I like to make a little work station. This is where you bring the kids into the kitchen and put them to work.
Get a 9x13 baking dish or something like it out.Pour some of the enchilada sauce from the blender into the pan.Grab a tortilla, fill it with chicken and cheese, roll it up and put it in the baking dish. Do this until you have the dish packed with enchiladas. Add the sauce as you like it. If I have leftover chicken and cheese I sprinkle it over the top, and pour the remaining sauce on top.
Bake at 350 for 25 min.
Maybe your 20 month old will appreciate all your hard work!!These are seriously delicious!!

Oh how sweet!!!!! Awesome that he's eating so well :) I just read the bumps post also...you don't think maybe he might have had a reaction to the peppers do you? Of course if he's had them before then that wouldn't be it but when you said that it just came to mind. Hopefully he's cleared up by morning and he'll be all better!
Auntie Panfi's enchiladas are the bomb! My kids won't eat them either, so we'll have to have an enchilada party with Owen and let the kids eat corn dogs... (ewww!)
