I ask myself the same question every day, "What's for dinner?" Dinner is time spent together as a family, eating at the table and talking about our day. It's important to me. I am a planner, and I make a weekly menu before doing my weekly grocery shopping. That hour I spend on Sunday writing my grocery list and planning my menu is the toughest. I have to plan for meals that everyone will enjoy, meals that are healthy, and I like to make sure we have plenty of vegetables with our dinner. I also like to throw a new recipe into the mix each week just to keep things exciting.
My kids' tastes couldn't be more opposite. Kam likes carb-heavy, lightly seasoned meat and lots of veggies. Owen likes really spicy, savory meat with lots of cooked veggies and refuses carbs most of the time. This is their usual, but Owen is definitely my pickier eater. He isn't a great oral eater, so when he requests something we usually go out of our way to make it happen... just so he'll eat! Do you have a picky eater?? I wanted to try out a casserole, or "comfort food" as I like to call it, but C isn't much of a casserole fan. I decided to give the Slow Cooker Pot Roast a try. I did alter it a bit, but I already had all the ingredients sitting in my pantry. These cans of Campbell's cooking soups are a staple in our house...beef broth, chicken broth, cream of chicken, beef consomme, and cream of mushroom (not pictured). I could ramble off a million recipes I make weekly. Soups and crockpot meals are my favorite, especially since it's winter and I am so busy! I can also add in plenty of veggies, a side salad and everyone is happy!
It was a rainy Sunday when I decided to try out the pot roast recipe, and my house smelled amazing, as you can imagine. I love pot roast! I followed the recipe but left out the package of onion soup mix... my family is not a lover of onions.
Six hours after starting the roast, we had a delicious dinner ready! The cream of mushroom soup thickened the beef consomme, making a fantastic gravy for the roast. I added a side salad full of leafy greens and a few rolls for the kids. Everyone was pleased!
