Happy October.. Pumpkin Pies

Happy October!! It's my favorite time of year.  The weather is perfect (in Palo Alto), the trees are changing colors, pumpkins, Halloween.. I love it all!  Last night, at the RMH, the kids had a cooking class with Keith from Rainbow Chefs.  There were about 10 kids surrounding an island in the RMH kitchen to make Pumpkin Pies from scratch, inside the pumpkin.  Yum.
First things first.. the kids had to clean all the pumpkin guts.  I'm pretty certain this is the best part!  After we had clean pumpkins, two of them went into the pot to be steamed so that the skin would peel off easily.
While the chef was busy burning his hands while peeling the skin, the little kids packed the graham cracker, buttery, cinnamon delightful mixture into the pumpkins.
They all waited patiently for the pumpkin filling to cook up. Pumpkin meat, heavy cream, creamed honey, cinnamon... perfectly fall!  The chef filled the graham cracker crusted pumpkins with the pumpkin pie filling and sprinkled with brown sugar.
We waited for about 20 minutes for the pumpkins to cook and the seeds to toast.  It smelled pretty delicious.  While waiting, we listened to all the little girls sing pop songs with Music Man Don.

Filled with a yummy pumpkin pie filling.  The chef used a spoon to scoop out pie into bowls for us all to enjoy.  The only thing missing was a giant scoop of vanilla ice cream.  We can't wait to make these when we get home with Daddy and Sis.

Totally! Is there a recipe somewhere? I know you described it, but I am not that great at recreating. Thank you for sharing. How fun!!!
