Taco Soup

Two posts in one day. Blame it on the diet, anything to keep my mind off sugar. Here is a healthy, delicious, easy recipe for Taco soup... it's too good not to share! I got the recipe from a fellow blogger. I admit it is probably way different than the original, but I am not good at following recipes. Enjoy!

Taco Soup
1lb Ground Turkey
1/2 Onion (chopped, sliced or diced)
2 garlic cloves
1 pkg taco seasoning

** Brown in skillet until turkey is cooked thoroughly

1 can pinto beans
1 can black beans
1 can niblet corn
2 can diced tomatoes (any variety)
1/2 bunch of cilantro (chopped and optional)
1 pkg ranch dressing mix (not optional, it's YUMMY)

** Toss it all in a crockpot -- even the cooked stuff in the skillet

Cook it on LOW for six hours or so and that's it!

Top it with shredded cheese, guacamole, sour cream, pico de gallo, chips, salsa...you get the point.
Owen loves the whole wheat pita chips.
Kamryn was only pretending to eat the soup, she would rather eat a bowl of refried beans for dinner. When she doesn't want to eat what we're eating she says.. "I'm not very hungry". Five minutes later, she's STARVING!! That's how she gets to eat what she wants.. I'm such a sucker. Carson is working late so we are eating dinner while sitting on the kitchen counter tonight.

Writing this post is making me hungry. I'm off for another bowl. ENJOY!

Gettin' Ready

Please excuse my lack of posts, it is only because I have been busy. Busy getting ready for our adventure to Stanford. I like to be prepared for anything. We don't know if we'll be coming home or staying. Either way, I need to be prepared.

I think I've earned VIP status for all the "stuff" I continue to drop off at Goodwill. Thanks to whomever invented the drive thru, drop-off at Goodwill.

I am spring summer cleaning our house in case we decided to "get rid" of it this summer. In case you were wondering, our ceiling fans are NOT growing fur on them, not mine, that is disgusting! Oh, and I didn't find dead flies in the window sills and proceed to suck them up with the vaccum hose. And while I'm not making any confessions. I did not clean out my pantry and find rock hard bagels with green fuzz in the very back behind the bread maker. I would never allow such gross things in my home.. I am the perfect housekeeper! (That was a little throwback to MckMama's Not Me Monday, which is today)

Today, I have a basketfull of clothes and books to drop off at Once Upon a Child so that I can get some cash for my "pricey stuff" and use that money to buy jackets and pants for our upcoming trip. We don't need pants and jackets here, n the desert. Did I mention the weather will be in the triple digits all week long?

As if all this hasn't been the greatest fun of my entire life... I get to have ten cavities filled on Thursday .. yes, I brush my teeth, floss and see the dentist every six months. I blame Sonic happy hour and genetics. I will post some totally HOT pictures of myself with a novicane filled mouth trying to smile... tune in Thursday for that.

Owen just fell asleep so I am going to workout. I'm trying to lose as much weight as possible before we leave. Not only will it open up the wardrobe possibilities in my closet, but it just feels good! I even made protein pancakes for breakfast today...delicious I might add. Here's the recipe for you daredevils.
Protein Pancakes
1 cup Oatmeal
1 cup Cottage Cheese
1 cup Egg Whites
1 tsp vanilla extract
*Blend it in a blender, pour it on a hot griddle and serve it up with some fresh berries... YUM.

It's just one of those days...

You know the days that just seem to go wrong?

We started the day running late for school, hopped in the car, got Owen buckled in, his oxygen and feeding pump hooked up and did the backpack/waterbottle/lunchbox check. Started the car and nothing. Tried again. Nothing. Darn battery.

Carson just happened to be home this morning getting ready to chaperone Kamryn's class fieldtrip. Whew. Carson jumped me my car, then left to make it in time for the fieldtrip.

The jump didn't last and my battery died another slow death. My dad came to my rescue and we went to walmart to find out my battery was under warranty by a month. Saved myself $70!

Not so fast. My battery cable was corroded so I had to get my car to the dealership for another cable. The guy said 'thetotalis$400dollarssignhere". Whoa, whoa what? To which he replied "thecableisonly$20butthelaborand80000milecheckupwillbeincludedintheprice". Again, dad to the rescue. He got it down to $94 for an overall service, new cable and they were fixing the front grill that fell off when the hood slammed shut on my dad's head. Sorry dad. For those of you that don't know my dad, he's a sales manager for a car dealership, he knows every trick in the book.

Back home, our internet stopped working. I called Cox to which they replied "our systems are down here, but we can have a tech out in the next week "ohandthereisa$50chargetosendatechout". Um, no thanks. Turns out it was an outage in the area and internet started working a few hours later on it's own.

Did I mention Owen yanked out his NG tube when we went back to the dealership to pick up the car? It was on accident and he was devestated. When I put it back in I think I missed his stomach and it went into his lungs because he turned blue... really blue. Then I pulled it out and blood came with it. Awesome, does this day get any better?

YES IT DOES. Because at the end of the day, I get to relax at home with these two and what could be better than that?
